PRIMARY OBJECTIVES:
At Travel & Leisure Co., our vision is to put the World on Vacation, in your position as the Pastry Chef you will be responsible for overseeing the resort’s pastry and bakery operations, ensuring all desserts, baked goods, and pastries meet the highest standards of quality, presentation, and taste. You will play a key role in menu development, daily production, team leadership, and upholding food safety and hygiene standards.

PRINCIPAL RESPONSIBILITIES: (Include but not limited to:)
- Oversee the daily preparation and production of all pastry and bakery items for restaurants, buffets, in-room dining, banquets, and special events.
- Develop and design creative, seasonal, and on-brand dessert menus that cater to various guest preferences, including dietary restrictions.
- Monitoring and ordering ingredients, supplies, and equipment, maintaining inventory, and ensuring freshness.
- Preparing doughs, fillings, and other components, utilizing various baking techniques, and operating kitchen equipment safely.
- Skillfully decorating pastries and desserts, paying attention to detail and visual appeal.
- Lead, train, and mentor the pastry team, ensuring consistent execution and quality control.
- Collaborate with the Executive Chef and F&B team on menu planning, refining current menu including contributing creative ideas for seasonal or signature items.
- Ensure proper inventory management, ordering, cost control, and waste minimization
- Maintain the highest standards of cleanliness, organization, and safety within the pastry kitchen
- Conduct regular training on pastry techniques, plating styles, and hygiene practices.
- Innovate with modern pastry trends, incorporating local ingredients and resort themes when appropriate.
- Uphold all food safety, hygiene, and sanitation standards in compliance with health regulations.
- Maintain exemplary grooming including fresh, ironed uniforms, wearing of name badge and ensure that personal hygiene standards are maintained at all times.
- Focus on the importance of customer service.
- Display an open friendly manner and positive attitude and team spirit.
- Put forth your input on menus, rosters and any other issues that involves the team.
- Communicate promptly, clearly and concisely to Chef and team members on all matters.
- Be punctual when arriving at work and returning from meal breaks.
- Promote a clean and secure working environment.
- Be familiar with and adhere to company occupational health and safety policies and procedures.
- Employees must ensure they comply with WDAP’s OH&S Policy, procedures and any reasonable instruction given by WDAP.
- Employees must not wilfully place at risk the health and safety of themselves or any other persons in the workplace and to not wilfully or recklessly interfere with or misuse anything provided for health and safety.
- Show integrity in all aspects of the position by doing the right thing, taking responsibility and delivering on the promise.
- Perform any other duties apart from those mentioned above as and when required by the management.
KEY POSITION CRITERIA:
- Proven experience as a Pastry Chef or Senior Pastry Sous Chef, preferably in a luxury resort or five-star hotel.
- Formal culinary or pastry training from a recognized institution.
- Expertise in pastry techniques including viennoiserie, plated desserts, artisan breads, chocolate work, and sugar artistry.
- Strong leadership skills and ability to manage a multicultural team.
- Excellent organizational and time management abilities.
- Creative flair with a keen eye for detail and presentation.
- Familiarity with cost control, stock management, and kitchen systems.
- Flexibility to work evenings, weekends, and public holidays as needed.
