PRIMARY OBJECTIVES:

At Wyndham Destinations our vision is to put the World on Vacation, in your position as the Chef De Cuisine you will be responsible for managing the day-to-day operation of the kitchen at the property, plan and design a menu that is in line with financial goals and is appealing to all guests, providing meals and beverages in a timely and professional manner.

PRINCIPAL RESPONSIBILITIES: (Include but not limited to:)

  • Place highest importance to food safety and hygiene of food preparation as outlined in the HACCP principles and the local guidelines for catering establishments.
  • Prepare, produce and present all foods in accordance with identified Food Hygiene and Health & Safety standards, commonly accepted in the catering industry.
  • Display eagerness to increase food knowledge and skills.
  • Strive to minimize food wastage.
  • Audits Kitchen stock & grocery lines daily & order stock as required
  • Maintain exemplary grooming including fresh, ironed uniforms, wearing of name badge and ensure that personal hygiene standards are maintained at all times.
  • Focus on the importance of customer service .
  • Display an open friendly manner and positive attitude and team spirit.
  • Follow given tasks to completion and to the best of your ability.
  • Put forth your input on menus, rosters and any other issues that involves the team.
  • Communicate promptly, clearly and concisely to Chef and team members on all matters.
  • Be punctual when arriving at work and returning from meal breaks.
  • Promote a clean and secure working environment
  • Be familiar with and adhere to company occupational health and safety policies and procedures
  • Employees must ensure they comply with WDAP’s OH&S Policy, procedures and any reasonable instruction given by WDAP.
  • Employees must not willfully place at risk the health and safety of themselves or any other persons in the workplace and to not willfully or recklessly interfere with or misuse anything provided for health and safety.

  • Show integrity in all aspects of the position by doing the right thing, taking responsibility and delivering on the promise.

KEY POSITION CRITERIA:

  • Trade Diploma in Culinary Arts or equivalent.
  • Minimum of three (3) years’ experience in a similar role.
  • Strong leadership skills with the ability to inspire and motivate a diverse team.
  • Creative flair and a passion for experimenting with flavors, techniques, and presentation.
  • In-depth knowledge of various cuisines, cooking methods, and culinary trends.
  • Excellent organizational and communication skills.
  • Ability to thrive in a fast-paced, high-pressure environment.
  • Proficiency in maintaining food cost and achieving financial targets.
  • Knowledge of local food safety and sanitation regulations.
  • Ability to work a rotating roster including weekends.
  • Ability to deliver quality customer service to owners and guests.
  • A “can do” attitude to extra roles and responsibilities.
